SSP's 80mm burrs in the screw-hole mount, for the Ditting 804 and 807 and the Mahlkonig Peak and E80, which all share the same burr platform. Choose the burr and coating above. Each one is a straight swap for the factory burrs, no shims.

Which burr

• High Uniformity (HU): SSP's espresso-first cut. A tight particle spread with enough fines for body, so it pulls proper espresso and still grinds well for filter. Red Speed or Silver Knight.
• Cast Lab Sweet (LS): SSP's re-cut of the old Ditting 804 cast burr. Owners who have run both side by side report an easier dial-in and a wider sweet spot than the genuine Ditting Lab Sweets, with a different but not lesser cup. Sweet and balanced, and it handles espresso and filter from the one set. Red Speed or Silver Knight.
• SKD11 (uncoated): SKD-11 tool steel with 60 teeth on the top burr and 65 on the bottom, cut for grinding speed. Uncoated, so it costs less than the coated sets and wears faster: figure on roughly 1,000 to 2,000kg of coffee where a coated set runs to about 5,000kg.

Red Speed (TiAlCN) is the usual pick for espresso and keeps a controlled amount of fines, so shots carry a bit more body. Silver Knight (DLC type) makes slightly fewer fines and leans cleaner. Both are rated for roughly 4,000 to 5,000kg.

Read this before you order for anything else. SSP cuts 80mm burrs in several mounting formats and they do not swap between grinders. Weber EG-1, Zerno Z2 and Option-O Lagom P80 owners need our SSP 80mm Blind Burrs, which use SSP's blind 3-pin mount. The Mahlkonig Tanzania and Ditting 805 take a different 2-pin blind burr.
