The Acaia Horizon represents a new frontier in coffee science, bringing innovation to the post-extraction maturation phase - the critical minutes between extraction and the first sip. Freshly brewed coffee exists in an unsettled state where environmental variables, slow degassing, and oxidation interact with its sensory profile before it reaches drinking temperature.
The Horizon instantly transforms the atmospheric environment inside the cup. It uses an integrated pressure sensor and active modulation to create a controlled low-pressure environment, removing oxygen and carbon dioxide while keeping delicate aromatic compounds. This results in smoother mouthfeel, rounded acidity, and enhanced natural sweetness, revealing the coffee’s intrinsic flavour.
By eliminating the atmospheric variables that occur after brewing, the Horizon ensures that the post-extraction maturation phase is precisely controlled. This provides a stable foundation for deepening understanding of a bean's intrinsic flavour and refining recipes with unprecedented precision.
