Coffee here grows in fertile red soil above 2,110 metres, under dense semi-forest vegetation of falase-banana and native shade trees. The farming families who supply the station work plots of less than two hectares and tend to measure their farms in trees rather than area, intercropping coffee with food crops and farming organic by default.\u003c\/p\u003e\n\u003cp\u003eWorth being clear about a name that gets muddled constantly: \u003cstrong\u003eDanche sits inside the wider Chelbesa locality\u003c\/strong\u003e, and roasters use the two station names interchangeably. They are not the same station. This lot was picked and processed at Danche, cupped at 88 points, and came to us as a 15kg vacuum-sealed microlot rather than the usual 30kg jute.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003ch3 class=\"mb-1 font-weight-bold\"\u003eYirgacheffe\u003c\/h3\u003e\n\u003cdiv class=\"row\"\u003e\n\u003cdiv class=\"col-md-6\"\u003e\n\u003cp\u003eYirgacheffe sits in the Gedeo Zone of southern Ethiopia and produces some of the most celebrated coffees in the world. High elevation slows cherry maturation, which builds sugar and acidity in the bean and adds complexity to the final cup.\u003c\/p\u003e\n\u003cp\u003eWorth knowing: \"Yirgacheffe\" is a recognised coffee-growing classification rather than a precise administrative location. Administratively this coffee sits in the Gedeb woreda of the Gedeo Zone — but it is graded, traded and sold as Yirgacheffe, and that is the name that carries meaning in a cup.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003ch3 class=\"mb-1 font-weight-bold\"\u003eAbout the Anaerobic Washed Process\u003c\/h3\u003e\n\u003cdiv class=\"row\"\u003e\n\u003cdiv class=\"col-md-6\"\u003e\n\u003cp\u003eAnaerobic washed is a washed coffee with one extra step, and the station is strict about what goes into it. Cherry is measured for sugar content on arrival and only fruit above 20 brix goes forward. It is then sorted mechanically to pull out unripe cherry and debris, floated to remove light and damaged beans, and pulped.\u003c\/p\u003e\n\u003cp\u003eWhere a standard washed lot ferments in open tanks for a day or so, this one is sealed into tanks for 84 to 96 hours with the oxygen shut out. Without oxygen a different set of microbes does the work and carbon dioxide builds up, slowing the whole ferment down. That long, cool fermentation develops aromatics an open tank will not, while the double wash afterwards strips the mucilage off completely — so the cup keeps the clarity and structure of a washed coffee instead of the heavy fruit of a natural. The parchment then dries on shaded raised beds for 13 to 15 days.\u003c\/p\u003e\n\u003cp\u003eIn the cup that reads as bergamot and lime up front, white nectarine through the middle, and an earl grey tea character on the finish. The body is silky and thickens noticeably as it cools.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003ch3 class=\"mb-1 font-weight-bold\"\u003eAbout the Heirloom Variety\u003c\/h3\u003e\n\u003cdiv class=\"row\"\u003e\n\u003cdiv class=\"col-md-6\"\u003e\n\u003cp\u003eThe heirloom label here covers Kurume, Dega and Wolisho, the landrace varieties native to the Gedeo highlands. Landrace simply means these plants descended from wild coffee populations and adapted to this specific place over centuries — its soil, its altitude, its rainfall. Nobody bred them for yield or disease resistance in a research station. They are here because they suit it here.\u003c\/p\u003e\n\u003cp\u003eThat matters practically as well as romantically. Farmers grow them with very few inputs, which is a large part of why smallholder coffee in Gedeb is organic by default rather than by certification. Wolisho is the larger, older tree with a rounder, sweeter cup; Kurume grows smaller and denser and brings the tighter, more aromatic acidity; Dega fills in the middle. Most Yirgacheffe lots are a mix of all three, picked and delivered together.\u003c\/p\u003e\n\u003cp\u003eRoasters chase Gedeo landraces for clarity, and that is exactly what a long anaerobic ferment risks burying. It has not here. The florals and citrus stay lifted and clearly defined, and the extra fermentation shows up as depth and a thicker body rather than as funk.
